Slow Cooker Apple Cake Recipe

This crock pot apple cake recipe is a quick and easy low-fat dessert that’s perfect for a chilly fall day. It’s ready in just 2-3 hours and uses basic ingredients, but tastes fabulous (and makes your house smell good too!)

You can easily substitute pears, peaches, or just about any other fruit for the apples. My mom had given me some Asian pears picked fresh from her backyard tree, so I used those instead of apples.

Low-Fat Crock Pot Apple Cake

from Fix It And Forget It Lightly

Ingredients:

  • 1 cup flour
  • 3/4 cup sugar
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 4 medium-sized apples, chopped
  • 1/3 cup eggbeaters (I used 2 eggs instead)
  • 2 teaspoons vanilla

Directions:

  1. Combine flour, sugar, baking powder, cinnamon, and salt.
  2. Add apples, stirring lightly to coat.
  3. Combine eggbeaters and vanilla. Add to apple mixture. Stir until just moistened. Spoon into lightly greased slow cooker.
  4. Cover. Bake on high for 2 1/2 to 3 hours.
  5. Serve warm.

Substitute pears or other fruits for apples in this recipe
I used Asian pears and sliced them instead of chopping – this worked fine when adding the dry mixture, but it was hard to stir evenly after adding the eggs, so I’ll definitely chop them into smaller pieces next time.

I was skeptical about this being a “cake” considering how dry it looked when adding it to the crock pot. But the natural moisture and condensation that builds up inside the crock pot from the heat provides the right amount of moisture.
